

It is simpler than it looks. The only thing with meringues is that they take quite long baking in the oven. However, the pleasure is all yours once it is finally out of the oven. Please watch for your sugar intake! 😝
Serves 6-8 | 2hr
- Ingredients
- 4 egg white (room temp)
- 270g castor sugar
- 1 cup choc chip (mini ones if you have)
- 1 cup cornflakes (crushed)
- ¼ tsp cream of tartar powder
- 2 tsp vanilla essence
Step 1: Add eggs and cream of tartar. Whisk med speed until frothy.
Step 2: Gradually add sugar while changing from med to high speed. You have to put in the sugar slowly, using a tablespoon at a time.
Step 3: Continue to beat until frothy and stiif peak forms.
Step 4: Prepare oven pre-heat at 140°C.
Step 5: Remove from machine. Add in vanilla essence, choc chips and cornflakes. Gently fold in til evenly distributed.
Step 6: Using 2 teaspoons, drop a teaspoonful of the mixture onto a baking sheet tray. No shaping required as we have the choc chips inside.
Step 7: Bake at 140°C for 40-50mins depending on your oven. Just see when the meringue is turning slightly light brown.
Step 8: Leave to rest for 5 mins before packing it into a airtight container or eat straightaway! 🙂
