Tauhu Bergedil

Ever since the start of Circuit Breaker, I have started to crave for tauhu bergedil. Have you seen those delicious photos on Facebook? So, I’ve decided to reach out to my sister-in-law who makes one of the best versions and get the recipe from her. Shout out to Huda, my lovely sil, for your fabulous recipe.

Ingredients

  • 1kg potato

Step 1: Wash and peal the skin. Cut into small wedges and deep fry. Fry batch by batch and mash ’em while it’s still hot.

  • Drizzle oil
  • 300g minced beef/chicken
  • 1.5 tsp curry powder
  • 1 tsp salt
  • 1tbs ajinomoto
  • Dashes white pepper

Step 2: Stir fry all the above. Once minced beef mixture is fried til very dry, remove from pan.

Step 3: Mix with mashed potatoes.

  • 1/2 cup spring onion, chopped
  • Fried shallot/bawang goreng up to your desire
  • 2 tsp salt

Step 4: Add these ingredients and mix well.

  • 2 pkt taupok, depends on the size

Step 5: Cut X in the middle of the top side and empty most of the taupok contents.

Step 6: Stuff the potato meat mixture inside.

  • 4 eggs, beaten and add salt for taste
  • 2 cups Panko breadcrumbs for coating

Step 7: Dip the taupok into egg and then to panko breadcrumbs. Straightaway deep fry in hot oil.

Ingredients – Chili dip

  • 3 cloves garlic
  • 10 red chili padi
  • 6 lime, small kasturi lime juice squeezed
  • 1/2 cup Kicap manis, sweet soy sauce
  • 1.5 tbs salt
  • 2 tbs sugar

Step 1: Stir fry garlic and chili, just to make it crisp. Blend everything til smooth. Serve as a dip. Enjoy!
