
Ayam Masak Merah (Spicy Tomato Chicken) with Sambal KangKong by the side. 🤗
In celebration of Ramadhan month 2019, Chef Wani has ventured into Malay cuisine and explore its fantastic tastes. I really love this dish as it’s both sweet, sour and spicy. Just fantastic.
40min | Serves 3-4
- Half chicken
- 1 tbs Turmeric salt
Step 1: Clean chicken. Cut into small pieces and mix with turmeric salt. Fry until 2/3 cooked.
- Oil
- 3 Star anise
- 1 Cinnamon
- 2 lemongrass, cut into half
Step 2: Stir fry with hot oil for aroma. Then take out.
- 4-5 big red chillies, chopped
- 1 cm ginger, squashed
- 2 cloves garlic, diced
- 1/2 large onion, diced
- 1.5 tomato, diced
- 1/2 cup tomato sauce
- 1/2 chili sauce
Step 3: Stir in the first items. Then add sauces and diced tomato. Stir in hot aroma oil.
Step 4: Enter the chicken. Let the gravy become thick. Turn chicken once in awhile.
- Spring onion, garnish
- Parsley, garnish
Step 5: When gravy thick, add garnish. Continue to heat 1-2 minutes. Then extinguish the fire. Serve hot with rice and ideally sambal kangkong. 😉
