
In 2019, there was a rave about halal mala hawker stalls in Food Republic, Kopitiam and sorts. Prices could fetch from $18 up to $30 depending on what you choose. I mean, why? Just because its so popular? So I indulge into deep research to make my own Mala to save money and surely, it did save me quite a lot. Everytime I had a craving for Mala, I just whip out this recipe. It is quite easy also. Once you buy the jars of sauces, you will be able to make a few times, just buy fresh vegs only. If you don’t like the numbing effect, then just omit the szechuan peppercorn and it tastes just as good.

Vegetables:
For the vegetables (and even the meat), just like at the stalls, you can choose whatever items you want to add in. Those below are the easiest and my favs so I’m good with that.
- 440g kangkong, cut like little finger length
- 4 baby potatoes, cut slices
- 1 small chinese cabbage, cut like anyhow stripes
- 3 pcs baiye tofu, cut stripes (the whole packet is alot so just 3 big pcs)
- 600g enoki mushroom, wash cut roots off
- 1 pkt soya bean sprouts
Step 1: Blanch all the vegetables and put them aside.
- drizzle cooking oil
- 2 cinnamon
- 4 star anise
- 1 tsp cloves
- 3 bay leaf
Step 2: Fry these spices for aroma oil then take it out.
- 2 thumbs ginger, squashed by the side of a chopper
- 40pcs dried chili, hydrated and deseeded
Step 3: Fry and then take out. For the chili, put aside for later use.
- 4 tbs spicy broad bean paste
- 2 tbs spicy chili sauce
- 4 tbs light soya sauce
- 400g stirfry beef, marinated w 1 tsp cornflour + 1tbs water
Step 4: Add all the sauces and fry. Add beef next.
Step 5: Put low heat and add the blanched veges. Mix well and add the dried chili back.
- 2 stalks parsley, chopped
Step 6: Add garnish. Mix Well and Serve with Rice or Springy Noodles. YUM!
